Flourless Chocolate Cake 3 cups white rice flour, 1 cup cocoa powder , 1 cup muscovado sugar , 4 large eggs, grated rind of 1 lemon and freshly squeezed juice of 1 lemon.
Mix dry ingredients together in a bowl. Add the eggs to a saucepan over low heat and beat until thickened. Pour into the dry ingredients gradually while stirring quickly with a wooden spoon or spatula. Once combined mix in the lemon juice and rind using a rubber scraper to reach all corners. Spread into two greased loaf pans lined with parchment paper.
Bake at 400 F for 35 minutes or until cake tester comes out clean . Remove from pans and cool on racks before slicing.
2. Rice Bread 1 cup cooked rice, 3 cups self-rising flour , 2 tsp vanilla essence , 4 Tbsp butter melted, or coconut oil, 2 eggs beaten with 1/4 cup milk.
Sift the flour into a large bowl then mix in the rice. Add remaining ingredients and blend well to form a dough that does not stick to your fingers. Pour into greased and lined loaf pan and bake at 350 F for 45 minutes or until golden brown . Remove from oven when done and let cool on wire rack before cutting . Makes one 8″ x 4″ thick slice of bread.
